Baby Blanket and Natalie's Lasagna

I know I have been slacking on blog posts lately. But I blame grad school and it being the end of the semester! I only have one more week of classes and only one final! So excited for the semester to be over! At the beginning of the semester I thought it was never going to end. But now I am really starting to see the light at the end of the tunnel. I will be moving to Wilkesboro, NC at the end of the summer. Then in at the end of August with the new semester I will be starting my practicum semester at Mulberry Elementary School. I am very excited and very nervous. I know I want to work ultimately in a middle or high school but I am very excited about this experience in the elementary school and the opportunity to work with a great counselor. I will be a semester full of professional growth and I am super excited to feel more comfortable doing something I am so excited and passionate about.

Ok on to what this post is about. The baby blanket is finished!!!! And a week before my cousin's baby shower in Raleigh! I was worried I was going to have to mail it out to her but I got it done in time! I am very proud of myself for finishing it and it not looking all funky. It is a very simple design but I figured it was a good way to start on my own. I want to learn some harder designs but I think I want someone to help me with getting started on those. Next on my list to make is knitting some place mates. :)

This week I invited some of my friends over for a girls night of yummy food. One of my best friends from undergrad makes a very yummy Lasagna and I have been craving it! I sadly forgot to take a picture of it but here is how you make it.

Ingredients: 
- 1 Jar pasta sauce (take your pick)
- 1 bag finely shredded Italian blend cheese (2 cups)
- 1 can cream of mushroom soup
- 1 can diced tomatoes with green chillies
- 1 pound of ground meat (beef or turkey usually best)
- Lasagna noodles

Directions:
1. Cook the pasta as directed. While the pasta is cooking cook your ground meat.
2. In a pot mix together your sauce, cream of mushroom soup, and diced tomatoes.
3. Once your meat is cooked add it to your sauce and bring to a boil and let simmer for a few minutes.
4. In a 13x9 baking dish put a little of sauce in the bottom then layer noodles, sauce, cheese noodles, sauce, cheese until you have the thickness you want. Usually its four layers.
5. Bake at 400 for about 15-20 minutes until the cheese is melted and sauce is boiling on the sides.
* You can also make this without meat but you just have to make sure you spread your sauce evenly between your layers.

Slow Cooker Salsa Chicken Tacos

Yes I know two posts in one day!!! Woah! hahaha I made these chicken tacos last night and they were super easy and super yummy!!! I found this recipe of course on Pinterest but it comes from Semi Homemade Mom.

Ingredients: 
- 4 boneless, skinless chicken breasts (frozen is fine)
- 1 cups salsa
- 1 can condensed cream of chicken soup
- 1 packet taco seasoning
- 1/2 cup sour cream
- tortillas









Directions:
1. Place chicken in the bottom of your crockpot. Sprinkle taco seasoning on chicken.
2. In a bowl, combine soup and salsa. Pour over chicken.
3. Cook on high 4 hours or 8 hours on low
4. Shred chicken with two forks and stir in sour cream. 
5. Serve on tortillas and enjoy :)

* I added cheese, lettuce, and tomatoes :) I used mild salsa but I am sure you could use hotter salsa if you wanted more of a kick!

Pinterest has recharged my batteries!

I know it may seem crazy to some of you but I really believe that Pinterest has recharged me. It is like it has given me back my life. Crafting and cooking always makes me feel better no matter whats going on. With Pinterest I have all of these new ideas that I cannot wait to try. I have gotten out of my cooking slump and learned out to crochet and have lots of fabulous quotes :)

I few months ago we found out that my cousin Lauren is going to have a baby! She is due the end of July. We are all super excited because it is their first baby! I took the excuse of them having a baby to try and make my first baby blanket! Hopefully I can finish it before the baby comes! Here is the blanket so far!








With Easter being the past weekend I went through my holiday board on Pinterest and was searching for something fun to make for Easter. I am sure like many of you that you dye Easter eggs. Well we did too... but they didn't turn out so well. I wanted really bright solid colors so I let them sit in the dye for a really long time. Maybe even to long... or the dye was old because it was bought on clearance who knows how many years ago. Well I was a little bummed because I wanted a cute Easter egg picture for my blog. Well I decided that with the eggs I would rather make deviled eggs rather than egg salad like we usually do.

Well thats when I remembered seeing deviled eggs that had egg whites of different colors. I jumped at the chance to try this and it was sooo simple. My family that I was little nuts but they thought they turned out cool too. You simply boil and peel your hard boiled eggs and cut them in half length wise. Take out the yoke and put in a bowl to make your deviled egg mix. (I would give the recipe but my Mom and sister Erin were just winging it.) Then you take your egg whites and you put them in a cup of water with food coloring and let them sit until you get the color you wanted. For the darker colors like purple, blue and green they did not have to sit for very long... or we just put in a lot of food coloring haha :) Either way they turned out good and tasted even better. And my Mom got to use her Pampered Chef Cool and Serve tray for deviled eggs!

I know this is already kind of a long post but I have to share this recipe too! I made Spicy Chicken Rigatoni one day for lunch for my Mom and I. We both agreed it was delicious!

Ingredients:
- 1/4 cup oil
- 1/2 teaspoon crushed red pepper
- 1/8 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1 Tablespoon Chopped garlic
- 6 oz chicken, sliced
- 3/4 cup Marinara sauce
- 1/2 cup Alfredo sauce
- 2 teaspoons butter
- 1/4 cup peas
- 1 lb Rigatoni pasta cooked





Directions:
1. In a sauté pan, heat oil over medium heat. Add crushed red pepper, salt, black pepper and garlic. Sauté just long enough for the garlic to caramelize and red pepper to release flavor into the oil. Add sliced chicken and sauté briefly to coat in spices and garlic.
2. Add Marinara Sauce first and then Alfredo Sauce and bring to a simmer. Cook until sauce thickens slightly and chicken as reached an internal temperature of 165. Turn off heat and add putter and peas and incorporate into sauce.
3. Drop cooked pasta in boiling water for 3 seconds. Let drain for 15 seconds. Toss with sauce. Place pasta and sauce in a pasta bowl, reserving the majority of the chicken to be placed on top of the pasta. Using rubber spatula, scrape any remaining sauce from the pan to the pasta. Garnish with crushed red pepper and serve.

* The website I found this from suggested using a jar of Parm. Rosa Sauce instead of mixing the two sauces, which is what I did and it was still yummy. I think you could add more chicken because I did not think it was enough for the amount of pasta.

Grandfather Mountain

A little over a week ago, Palm Sunday if you really care, my roommate Brittney, her friend and I went to Grandfather Mountain. About twice a year they do dollar days for locals and college students. So we took full advantage of the discount! We did one of the short hikes up to the bridge and went to see the animals. It was a great little trip and it was so nice to be out in nature :) Excuse the pictures being down one long line... formatting issues haha!





  








I can be in the hunger games... Just give me a little mud and I will blend right in!
